    Heat 1 tbsp oil in a large saucepan over medium-high heat, add the beef mince and fry until well browned.

    Tip the beef into a dish, add another spoonful of oil and brown the pork mince in the same way.

    Return the pan to the heat with the remaining oil, lower the heat and cook the shallots for 8 to 10 minutes until very soft.

    Add the garlic and cook briefly, then return both browned meats to the pan.

    Stir in the passata, tomato purée, red wine and oregano, cover and simmer over low heat for 45 minutes.

    Cook the spaghetti following the packet instructions, saving a mug of pasta water before draining.

    Stir half the Parmesan into the Bolognese and loosen with a spoonful of pasta water if the sauce looks too thick.

    Toss the spaghetti through the sauce, season well, and finish with the remaining Parmesan and basil leaves.

Kitchen tips

Brown the beef and pork in separate batches so the mince fries properly instead of steaming.

If the sauce tightens near the end, pasta water restores gloss without diluting the tomato base.
