    Slice the chicken breasts in half horizontally and then into thin strips. Put them in a bowl, add the remaining marinade ingredients and rub everything into the meat.

    Heat 2 tbsp oil in a large frying pan and cook the onion wedges for 6 minutes, then turn up the heat until the edges are slightly charred. Season and transfer to a tray to hold warm.

    Add the peppers in batches and cook them similarly. Move them to the tray with the onions. Cook the cherry tomatoes in the same way and add to the peppers.

    Heat a griddle pan or use the same pan to cook the chicken in batches on high heat. Let the edges catch and brown slightly, then keep the chicken warm on the tray.

    Heat the flour tortillas on the griddle, wrap in foil and keep warm in the oven, or microwave following package instructions.

Tips

Cook in smaller batches if your pan gets crowded; overcrowding cools the pan and softens the chicken strips.

Keep tortillas wrapped in foil so they stay warm and pliable through serving.

Add a squeeze of lime or extra coriander right before eating to preserve fresh aromatic lift.

Use a very hot pan for the final chicken batches so browning happens quickly while the interior stays juicy.
